About Pauline Schreiber

Pauline Schreiber is an Assistant Professor in the Department of Nutrition & Wellness at International University Canada, where she teaches and supports students across the School of Health Sciences. Her academic work focuses on dietary science, examining how nutrients, food composition, and dietary patterns affect human health, growth, and disease prevention across different populations and life stages.

Throughout her early academic career, Pauline Schreiber has built a teaching approach grounded in evidence-based nutritional science, helping students understand established research on macronutrients, micronutrients, and dietary patterns rather than popular but scientifically unsupported nutrition trends. She encourages students to evaluate nutrition claims critically using peer-reviewed research.

In her courses, Pauline Schreiber draws on dietary science research, nutritional assessment methods, and current developments in nutrition science to help students build a strong scientific foundation. Students explore topics such as macronutrient and micronutrient functions, dietary assessment techniques, nutrition across the lifespan, and the relationship between dietary patterns and chronic disease prevention.

As an Assistant Professor within the Department of Nutrition & Wellness, Pauline Schreiber also supports curriculum development that reflects current nutritional science research and evidence-based dietary guidelines. She works closely with senior faculty across the School of Health Sciences to ensure that coursework remains scientifically rigorous while addressing practical nutrition counseling applications.

Pauline Schreiber is especially attentive to helping students distinguish between well-supported nutritional science and popular nutrition misinformation, recognizing that the nutrition field is particularly prone to trend-driven claims that lack scientific backing. She designs coursework that builds critical evaluation skills alongside foundational nutrition knowledge.

Recognizing that many of her students are working professionals studying online, Pauline Schreiber structures her courses with accessible research summaries, clear scientific frameworks, and consistent opportunities for applied discussion. Her approach to online teaching emphasizes building scientific literacy in nutrition that students can apply across wellness, health education, and counseling contexts.

Students who study under Pauline Schreiber often highlight her ability to make nutritional science clear and evidence-grounded. Her long-term goal as an educator is to help students develop the scientific understanding needed to support careers in nutrition, dietary counseling, and wellness education.
